Our small batch Indiana swinery specializes in NON GMO uncured (nitrate free) smoked bacons. Our jowl bacon is smoked and sliced pork jowls (cheeks). Jowl bacon is known for being more fat than meat and thus we highly recommend the cold oven baking method for this type of bacon. This is a well rounded cut that can also be used in many dishes that pancetta might be called for. Approximately .75 pound packages.

A note from our processor: "We 'cure' with all natural sea salt, celery juice powder, and seasoning for a no added nitrite/nitrate guilt free product. We use an all natural hickory wood smoke with just a slight hint of smoke. Not the liquid smoked product some do not enjoy."
