Leaf fat is the connective tissue fat that comes from the internal cavity of the pig and surrounds the organs, specifically the kidneys. When rendered down it does not have a "porky" odor like back fat might and for this reason it is known as the baker's fat. Rendered down, it is perfect for making pies and other baked delights. We also use this fat in our farm crafted soaps. You would never use this fat to for sausage making.
